Designer Discipline Recipe: Chia Seed Pudding

Chia seeds are a gluten free grain and a great source of many essential minerals such as calcium, phosphorous, iron, manganese, and magnesium.

This Chia Pudding, with a Designer Discipline spin, is healthy and packed with flavor!

Pudding:
  • Almond Milk – 3/4 Cup
  • Fresh Shredded Coconut – 4 Tablespoons
  • Chia Seeds – 3 Tablespoons
  • Agave Nectar – 2 Tablespoons
  • Fresh Coconut Juice – 1/4 Cup
  • Greek Yogurt – 1/4 Cup
  • Nutmeg -1/4 Tsp
  • Cinnamon – 1/4 Tsp
Toppings:
  • Mango – 1 Diced
  • Kiwi – I Diced
  • Banana – 1 Whole
  • Shredded Coconut – 1/2 Cup
  • Fresh Mint Leaves for garnish
Recipe makes 4 servings.
Directions:
Mix all the ingredients for the chia pudding together and let it sit in the fridge overnight, or at least for a couple of hours to allow the chia seeds to soak up the liquid.
Spoon about 1/2 cup of chia pudding into 4 small dessert cups.
Top the chia pudding with diced mango, diced kiwi, sliced banana, and shredded coconut.
Top with a fresh mint leaf and enjoy!
